Introducing the latest addition to Cheyenne's food truck scene. Pufkins hit the streets last month, serving pancakes with a unique twist.

The idea is the brainchild of Barbara Willett. Several years ago, she was making pancakes for her kids, when she randomly decided to pour the batter into a muffin pan. Her creation was a hit and Pufkins were born.

"They're not muffins or cupcakes. They're pancake-muffin hybrids made from scratch", she said.

As Willett's home-based business grew, friends and family encouraged her to expand. She eventually purchased and repurposed a truck, which she plans to park around town every Wednesday through Saturday.

"We’re not a big, corporate bakery; it’s a 'just me and my muffin pan' operation."

Along with her food truck, Willett also accepts advanced orders online. Pufkins come in a variety of flavors, including apple cinnamon, blueberry, chocolate chip, strawberry, and are also available in gluten-free options.
